Pasta is one of my favourite go to hangover foods!

 

This vegan & gluten free recipe offers a fragrant allium aroma with a delicate peppery taste.

 

Enjoy this deliciously nutritious meal without feeling guilty.

 

 

For 2 people

Boil (Gluten free pasta)

  • Hot water
  • Rice penne pasta: 2 cups

 

Lightly fry

  • Coconut oil: 3 tbsp
  • White onion: 1 chopped
  • Garlic: 2 gloves crushed
  • Apple cider vinegar
  • Chili flakes / paprika: 1/2 tsp
  • Shiitake mushrooms: 3-4 chopped
  • Spinach
  • Tomato purée paste: 5 tbsp
  • Black pepper: 1 tsp
  • Himalayan Salt: 1 tsp
  • Coconut Sugar: 1 tsp
  • Nutritional yeast (inactive): 1 tsp
  • Pasta

 

 

Methodology

  1. Bring pasta to boil for up to 10 minutes.
  2. Drain pasta.
  3. Fry the ingredients in the order shown above for 10 minutes on a medium heat, adding the pasta and nutritional yeast last.
