Who said doughnuts can’t be healthy?

 

So you want a tasty doughnut, but vegan, gluten free, dairy free and RAW? Well I have the perfect recipe for you!

 

10 Doughnuts

Blend in food processor (Doughnut base)

  • Rolled oats (gluten free): 1 cup
  • Coconut flour: ½ cup
  • Dates: 1 cup
  • Himalayan salt: a pinch
  • Maple syrup: 1 tbsp
  • Water: add small amounts gradually
  • Coconut oil: 2 tbsp

 

 

Blend (White Cream/topping)

  • Coconut cream: ¼ cup
  • Coconut milk: ¼ cup
  • Coconut oil: 1 tbsp
  • Maple syrup: 1 tsp

 

 

Blend (Red Cream/topping)

  • Coconut cream: ¼  cup
  • Raspberry freeze-dried powder: 1 tsp
  • Coconut milk: ¼ cup
  • Coconut oil: 1 tbsp
  • Maple syrup: 1 tsp

 

 

Blend (Blue Cream/topping)

  • Coconut cream: ¼ cup
  • Blue pea powder / Blueberry powder: 1 tsp
  • Coconut milk: ¼
  • Coconut oil: 1 tbsp
  • Maple Syrup: 1 tsp

 

 

Double Boiler (White chocolate topping)

  • Cacao butter: ¼ cup
  • Maple syrup: 1 tsp

 

 

Recommendation

The doughnut base may take a couple of minutes to bind. Ensure you add a little bit of water gradually as the mixture is blending and you should notice a thick dough consistency forming. Once this forms you can stop blending.

 

If the coconut oil is solidified gently heat the coconut oil (between 25 -40 degrees Celcius) and it will turn into liquid form.

 

Doughnut moulds are handy for this recipe. If using, put the doughnut Base into moulds and leave to freeze until hardened (around 1 hour). Then remove doughnuts from the moulds and apply the topping.

 

To temper accurately use a double boiler method and continuously stir the ingredients between 30 – 34 degrees Celsius until the mixture becomes glossy and starts to thicken (generally 5-10 minutes). Then take off heat and continue to stir for another 2-3 minutes – a temperature gun or thermometer is recommended for accuracy and if you want to ensure the chocolate is Raw.

 

Once the toppings have been applied freeze the doughnuts again to set for up to 2 hours and then store in the fridge or keep in the freezer. The doughnuts defrost quickly and can be eaten very soon after.
