Native to China, water chestnuts are a member of the Sedge plant family which stem from the Cyperaceae famly.
Water chestnuts are not nuts, but actually small rounded aquatic vegetables, with a hardened dark brown shell and an edible white interior which is crunchy and offers a subtly sweet coconut flavour.
- Traditionally used by the Chinese as a curative and food supplement which alleviated nausea and helped to detoxify impurities from the body. (1)
- Contains flavonoid antioxidants which provides autoimmunity functions to the body as well as the potential to protect against colon cancer. (2)
- Has no cholesterol and very low in calories which promotes weight loss as well as prevents the risk of atherosclerosis. (3)
- Provides the minerals and vitamins: fibre, copper, calcium, and magnesium, and an abundance of B-vitamins, which combine to increase the metabolic rate of carbohydrates, proteins and fats as well to prevent degenerative diseases. (4)
